I want one of these fake sable throws.......

SUNSHINE SALAD
Mix together in a bowl:
Your favorite mixed Greens
Goat Cheese crumbled over the top
1/2 a can or more of drained, rinsed Garbanzo beans
A handful of Pine nuts
Some Hearts of palm, sliced into 1/2 inch circles
Green and Black olives
Toss with your favorite dressing
Perhaps Balsamic vinegar and Oil
Season with Salt and Pepper

Day 220


ENTRANCE TO NEW HOME IN THE DESERT

Simple, pure, and heavenly.
It doesn't get much better than this.

TOMATO AND MOZZARELLA
Slice three or four vine ripened Tomatoes into thick slices
Slice fresh whole milk Mozzarella
(get buffalo if you can)
into the same thickness and layer with tomatoes
Scatter Basil leaves like butterflies upon the surface
Mix together Balsamic vinegar and Olive oil with Salt and Pepper
Pour over and enjoy

You could also chop everything up in a bowl
Add one luscious avocado
And a handful of pine nuts

Day 217



Every meal with this fabulous family was a blessing!

MRS. MURPHY'S MEXICAN SALAD
Chop for the salad:
One head of Iceberg lettuce
2 luscious Tomatoes
1 small Red Onion
Add:
1/2 cup or more grated Cheese
1 small can sliced black Olives (or pit your own)
1 small can drained Kidney Beans
Secret Sauce:
1 pint Sour Cream
1 tablespoon Mayonnaise
1/2 cup Salsa
Salt and Pepper
One chopped Avocado
Mix everything together
Serve with crushed corn chips on the top

Day 214


These are simple cheesecake recipes.
Purchase crust mix (graham or Oreo)
and place in jars or small glasses.
You may add chopped up chocolate bars or fresh fruit.
Simple, sweet, adorable, delicious.

Chocolate Cheesecake
1 package Cream Cheese
Juice of 1/2 orange
1 can (14 oz.) chocolate sweetened condensed milk*
*If you can't find chocolate sweetened condensed milk
add 1/2 cup of Hershey's chocolate syrup to reg. sweetened condensed milk.
Combine.
Combine cream cheese, juice and condensed milk until creamy and smooth.
Pour onto prepared crust, chill at least three hours.

No Bake Cheesecake
1 package cream cheese (8 oz)
1 can sweetened condensed milk (14 oz)
2 tablespoons lemon juice (can be modified to taste)
1 tsp clear vanilla extract
Filling of choice.
Same directions as above.
I made the graham cracker crust
according to the directions on the box and bought the Oreo crust.
I just spooned about 1/2 cup of filling into each jar
then added the fruit filling of choice or fresh fruit
then refrigerated for a few hours.
Easy peasy!

Day 211


This was made with the pizza dough from Trader Joe's.

CINNAMON BUN
Roll out the Pizza Dough on a floured surface
Spread soft Butter all over dough
sprinkle liberally with Sugar and Cinnamon
Add some chopped Nuts if handy
Fold in half
Cut into 1 inch wide strip
Roll into spirals or tie into knots
Bake 350 for 10 to 15 minutes
Mix a little milk with Powdered sugar for an icing

These were good....but you can also get 5 in a can
already prepared that are even better!

He makes his fresh....I purchased mine from Trader Joe's.
This is a sweet version.

DAVID ROCCO'S AFTER SCHOOL SNACK
Take golf ball size bits of Dough
Pull or roll into flat discs
Heat Oil in pan till sizzling
Plop in the dough and fry until golden on both sides
Remove to paper towels
Add a bit of Butter
And sprinkle generously with Sugar and Cinnamon
Yummy!

Split a sweet Hawaiian bread roll
Spread with Dijon Mustard
Layers with thinly sliced rare barbecued Trip Tip steak
Add sliced sweet Pickle
Squeeze together sand take a bite
