2012 Week 9, Day 4


LASAGNA CUPCAKES
Spray muffin tin with Pam
Place one WonTon wrapper in each cup
Sprinkle a bit of cheese in each -
Parmesan, riotta, or mozzarella
Break a non-boil lasagna nooodle into little square bits
and place on top of cheese
Spoon a teasoon of marina sauce (Barilla) onto noodle
Add teaspoon of pre-made meat sauce
Add one more lasagna noodle bit
More marinara sauce
A dollop of ricotta
I topped it off with a square of colby jack cheese
but feel free to use Parmesan, cheddar, swiss - whatever you have available
Sprinkle with oregano
Bake 375 for 20 minutes
Cool 5 minutes then pop out
I tired to make these in cupcake papers thinking the cleanup would be easier
but they taste better in the crunchy wontons
Not quite a finger food but fabulously delicious

2012 Week 9, Day 3


PISTACHIO CHOPS
There's something so satisfying about pounding
a hunk of pork or chicken into a thin slab and
breading it before sauteing in olive oil to a crunchy golden brown.
This time I added pistachio nuts (about 3/4 cup) to the bread crumbs
for a new dimension of flavor.
Always dip your "cutlets" in seasoned flour first
Then an beaten egg wash
And then a breadcrumb/nut coat.

2012 Week Seven


PERSIAN VERSUS KEY LIMES

2012 Week Eight


SHEPHERD'S PIE A LA MUSEUM
Inspired by the Palais of Tokyo in Paris
Saute 1 pound of ground beef
Add a minced garlic clove and a bit of onion if you like
Season with
salt and pepper, turmeric, cayenne, whatever
Place in the bottom of a small casserole
Prepare instant mashed potatoes as directed on package
Add 1/2 cup grated Parmesan cheese and maybe one beaten egg
Cover the meat with the potato mixture
Bake 350 15-20 minutes
Serve with a dollop of butter of a splash of olive oil
Herbs may be added to the potatoes
Delicious simple wholesome comfort food.

FINISHED COCOA

2012 - Week 7, Day 7


AUTHENTIC HOT COCOA
ALMOST AS DELICOUS AS ANGELINA'S IN PARIS
1/2 cup sugar
1/4 cup cocoa
dash salt
1/2 cup hot water
mix all these ingredients in saucepan
cook and stir until it boils and stir for 2 minutes
stir in
2-3 cups milk
heat but do not boil
remove from heat an add
1/4 teaspoon vanilla
pour into mugs
top with whipped cream
super rich yummy cocoa
may be diluted with water or milk
