Day 289


Galloping Gourmet Turkey
My husband use to run home at lunch during his USC days
 to watch this elegant man Graham Kerr cook in his tuxedo!
This is the only way we ever prepare turkey.
 I modified it for a turkey breast and 2 chicken legs. I put the stuffing in small ramekins.
It was so delicious I forgot to photograph it!
Turkey - 10 lbs
Onion - 1
Parsnip - 1 large
Butter
Sausage meat - 14 oz
Sesame seeds
Turkey liver
Garlic clove
Apple
Thyme and Parsley
Breadcrumbs - 3/4 cup
Egg - 2
S & P
Bacon slices
Preheat oven 325
Peel and finely slice onion and parsnip
Saute in butter over low heat for 15 minutes
Fry together sausage, garlic, sesame seeds and liver for 5 minutes
Add to parsnips in bowl - smash with potato masher
Add chopped apple, eggs, crumbs, herbs
Season inside of turkey with S & P
Stuff neck area only
Brush skin with melted butter and cover with bacon slices
Cook 3 hours,basting
Cover with water soaked brown paper if too brown
Let turkey sit 20 minutes before carving
Simpler version: place turkey breast and 2 chicken legs in casserole
Season with S & P and thyme sprigs
Cover with a slice of bacon, splash of oil and a pat of butter
Make stuffing omitting sausage and liver
( I used sunflower seeds instead of sesame seeds & one egg)
and put into small ramekins
Cook until meat is no longer pink

Day 288


Monday Nite Beef Stroganoff Bowl
my husband is not a mushroom eater
so here's a super simple,
quick and easy beefy bowl of goodness...
everything is approximate
thin sliced tri tip or sirloin - 1 lb
butter
olive oil
onion - chopped
garlic - minced
ketchup - little squirt
barbecue sauce - big squirt
red wine
sour cream - 1 cup
hot cooked egg noodles
cook your noodles first and put back in pot with lid and olive oil
get your pan very hot and work fast:
the meat in so thin sliced you don't want to overcook it or it will get tough
put a small cube of butter and olive oil in pan
add meat, onions and garlic and saute just until it starts to lose all pinkness
squirt in ketchup and barbecue sauce and pour in about 1/2 cup wine
cook a couple minutes
add sour cream
can be seasoned with salt and pepper, turmeric, or cayenne
put noodles in a bowl, spoon on meaty sauce, go enjoy the game

HOT BUTTERED RUM
Butter - 1 cup softened
Brown sugar - 1 cup packed
Powdered sugar - 1/2 cup sifted
Nutmeg and Cinnamon - 1 teaspoon ground each
Ice cream - 2 cups softened
Rum
Water
Nutmeg

Beat together butter, sugars and spices
Add ice cream
Freeze in covered container

Place 2 huge tablespoons of the ice cream mix in a mug
Add 1 jigger of rum
Fill with boiling water
Stir well
Grate nutmeg on top

Too yummy!!!!

DONUT FRENCH TOAST
2 Eggs
1/2 cup Milk
4 teaspoons Vanilla extract
4 slices white Bread
Butter for frying
1/4 cup Sugar
Beat eggs with milk and vanilla in shallow bowl
Soak the bread in the egg mixture
Heat butter in pan and fry the bread
Make certain you cook it long enough so the center gets cooked
Dredge the cooked bread in the sugar until coated like a donut

13 came to a holiday cocktail party
CRANBERRY MINT INFUSION
Pour 4 cups boiling water over
2 cups fresh mint leaves
Let steep 10 minutes, strain and cool.
In a small saucepan, bring to boil
2 cups fresh cranberries
1 cup sugar
1 cup water
Let cool, then strain
Combine
mint tea
cranberry syrup
1/2 cup lemoncello
1 cup vodka
3 tablespoons fresh lemon juice
Either pour into cocktail shaker full of ice
And strain into a martini glass
Or pour into shot/aperitif glasses
Garnish with mint leaves
