WON TON CHEESEBURGERS
Always trying to come up with yummy finger foods
Cook hamburger until almost desired wellness
Cut into strips
Place one and a slice of cheese
and a slice of pickle
on a won ton wrapper
brush edges with egg wash
roll up
saute in hot oil until brown
serve with ketchup

Fiery Beef Marinade

½ cup Dijon mustard

½ cup soy

¼ cup honey

2 tablespoons fresh lime juice and a bit of zest

 2 minced cloves of garlic

½ tablespoon of cayenne ( or more to taste)

Use to marnate and baste

Reserve some to drizzle over cooked meat

Always make extra pasta to warm up for a quick lunch or snack

PROSCIUTTO PASTA

Heat Olive Oil and Butter in large pan
Toss in cooked Rigatoni
Shred Prosciutto over pasta - add twice as much as you think - it shrinks
Pour in a splash of White Wine
Sprinkle in some fresh Thyme
Finish with a handful or two of freshly grated Parmesan/Romano cheese
Garlic can always be added in the beginning - I was out
Toss with a little Salt and fresh ground Pepper
Perfect!

Day 292


CRANBERRY RELISH
This is one of my favorite things about the holidays.
Perhaps because I grew up in Massachusetts.
Take one bag fresh Cranberries - rinsed
Throw in food processor with 5-6 chopped Oranges
with rind but no seeds
I add 2-3 tablespoons chopped fresh Ginger
Pulse until chunky
Add at least 1/2 cup Sugar
Until the perfect combination of sweet/tart is achieved
Chill and eat
