2012 Week 22, Day 4


STIR FRY PORK FILLETS WITH HONEY AND GINGER
Thinly slice 2 pork fillets
Marinate for at least one hour in
Sliced green onion
1 Tablespoon soy sauce
1 tablespoon water
2 tablespoons honey
juice from 2 limes and zest
salt and pepper
Prepare a very hot wok
add a little peanut oil
quickly saute pork (don't cook too long or it gets tough)
add 1 or 2 cloves minced garlic
some minced fresh ginger root
1 tablespoon soy sauce
1-2 tablespoons cooking wine
1 tablespoon oyster sauce (optional)
2 teaspoons 5-spice powder
3 tablespoons honey
1 tablespoon fish sauce (optional)
cook maybe 1 minute more
remove from heat
add one more squirt of lime or lemon juice
1/2 teaspoon baking soda
serve with rice

2012 Week 22


CRISPY CHICKEN THIGHS
heat 1 tablespoon olive oil in cast iron skillet over medium high heat
season 6 bone-in skin-on chicken thighs with salt and pepper
cook chicken skin side down until crispy,
about 8 minutes, flip over
add 2-3 cloves of garlic, smashed but with paper on
and one inch of fresh peeled and thinly sliced ginger
roast in over at 450 20 to 22 minutes
squeeze lime or lemon juice on chicken and sprinkle with chopped cilantro
optional: any vegetable may be roasted with the chicken - such as cauliflower or broccoli florets,
asparagus spears, carrots, peppers or mushrooms
maybe add a little chili or cayenne for a bit if heat

2012 Week 21, Day 3


CREAMY LIMONCELLO
A bit more decadent, and dare I say subtle, than standard limoncello,
this smooth, rich cream version will wow your guests every time.
6 Lemons
2 cups good quality Vodka
1/2 gallon 1% Milk
1 cup Sugar
peel yellow zest from lemons (no white please) reserving fruit for another use
soak in vodka in glass jar room temperature a minimum of four days
then strain thru a sieve, discarding peel and transfer to a glass bottle
simmer mile in a saucepan with the sugar, uncovered,
stirring occasionally until reduced to about 4 cups - this takes q few hours - be patient.
Skim off any foam. Cool completely. Pour thru sieve and add to vodka.
Chill until cold.
Keeps 1 month in frig. Shake before serving.
