MEDITERRANEAN BRUCHETTA

ciabatta bread
garlic
olive oil
lemon juice
dried oregano
s & p
ricotta cheese
tomatoes
fresh mint
s & p
grill or toast the bread
I rub the slices with a garlic clove, drizzle with oil, s & p, spritz of lemon juice, oregano
in bowl mix ricotta with chopped tomatoes, mint, s & p
spoon onto bread, sprinkle with additional mint if desired

I made another version omitting tomatoes and pan fried pancetta till crispy and added to the ricotta
