I'm always looking for new ways to serve meat to my man.
This was a total stretch for me, courtesy of Tyler Florence.
Now I understand why the south has an obesity problem!
1 pound beef bottom round ( I used tri tip)
1 cup flour
1 tablespoon garlic powder
1 tablespoon onion powder
s & p
1 - 2 eggs
1 cup buttermilk (or whole)
hot sauce (or cayenne)
vegetable oil
1-2 tablespoons flour
1/2 cup buttermilk
1/2 cup milk
s & p
hot sauce
in dish mix flour, powders, s & p
in another dish mix eggs, buttermilk, hot sauce, s & p
cut beef 1/2 thick and pound using teeth side of meat mallet
dredge in flour, then in buttermilk, then back in flour
allow to rest in frig on rack for 20 - 25 minutes before cooking (important step)
add 2 inches oil to cast iron skillet and heat to 356 degrees (or throw in some flour till it sizzles)
fry 2 - 3 steaks at a time till golden brown, 3 - 4 minutes a side
drain on paper towels
carefully remove oil from skillet leaving 1/4 cup
sprinkle in flour and make a roux
add buttermilk/milk and whisk till thick
season with s & p and hot sauce
place steaks on serving platter and top with gravy
too damn delicious!
