FRENCH DIP


PHILLIPE'S is downtown LA
 and THE place for the best French dip sandwiches on the west coast.
This recipe transports us to their fabulous sawdust covered floor,
 rubbing shoulders with cops and firemen deliciousness.

2 cups low sodium broth
1 medium onion sliced
2- 3 cloves garlic smashed
1 tablespoon Worcestershire sauce (or barbecue)
1 1/2 pounds beef brisket, trimmed
salt and pepper
in a slow cooker, combine broth, onion, garlic, Worcestershire
season brisket with salt and pepper
cook on low until very tender, 4 hours on high or 7 hours on low
Before serving, transfer brisket to cutting board and slice thinly against grain
strain the cooking liquid(may be boiled to reduce)
Layer meat onto sliced baguette
optional: mustard very spicy or with horseradish
dip in broth and devour
optional: greens may be mixed with oil and vinegar and added to sandwich
