INA'S PORK TENDERLOIN
1 lemon, zest and juice
great olive oil
minced garlic
tablespoon of fresh chopped rosemary and thyme
Dijon mustard
mix all ingredients well and place in Ziploc with
1 or 2 pounds pork tenderloins
marinate 3 hours to overnight
remove meat, discard marinade, sprinkle with salt and pepper
saute in oil until all sides are golden brown
roast 400 degrees 10 - 15 minutes until thermometer registers 140
remove from oven and cover with foil for 10 minutes
carve 1/2 inch diagonal slice
(pink is good)
serve with juices
