Ulpio was this wonderful Italian composer I knew -
a quintessential European gentlemen and total madmen all rolled into one.
This is his recipe.
ULPIO'S BISTECCA ALLA ROMANA
Get a very good fillet of beef
and have your butcher scaloppine it or slighty freeze it and do it yourself.
Saute the steak quickly in butter until it loses its color.
Squeeze one or two garlic cloves thru a press onto the meat.
Pour at least 1/2 cup red wine into pan.
Add chopped fresh oregano.
Simmer briefly.
Serve immediately.
