Day 29

I've had this hundreds of time with a white fish so decided to make it with red.

CEVICHE
A salmon fillet - about the size of your hand, remove skin and chop finely
Add some chopped fresh dill
A pinch of sea or kosher salt
The zest of 1/2 a lime
The juice of a whole lime
A bit of cayenne
A dash of red pepper flakes
Mix all together and let the lime juice "cook" the fish.
Serve with crackers, tortilla chips, tiny boiled potatoes, on a bed of lettuce.
You may add a finely chopped jalapeno chili  or red pepper.
Be inventive.
Creativity can be quite delicious.
