2012 Week 10, Day 4


RICE PUDDING
I always make double rice.
It freezes well to serve at some other occasion
or makes this super simple dessert

3 cups cooked rice
1/2 cup sugar
1 (13 1/2-ounce) can coconut milk

In a large pot, stir together the cooked rice
with the sugar and the coconut milk.
Bring to a simmer, reduce the heat to low,
and cook, covered, stirring occasionally,
until the rice is very soft and the milk is thick, about 30 minutes.
Spoon into wonderful little cups and eat warm or cool.
You may add raisins, tiny bits of chopped ginger, chopped nuts
- whatever your heart desires.
