2012 Week 11, Day 2


TINY MINT CHICKEN BURGERS
1 pound ground chicken or turkey
1 small red onion or yellow or green, finely chopped
1 tablespoon finely chopped ginger
1/2 cup chopped fresh mint
1/2 cup chopped fresh cilantro
1 large egg, beaten
1 or 2 small chopped chillies or cayenne or red pepper flakes
1/2 teaspoon salt
1 teaspoon olive oil
Combine all ingredients together except oil
and mix well
Shape about 1/3 cup into small patties
Heat oil in cast iron pan over medium high heat
Fry patties until brown and cooked thru, 5-7 minutes
Turn once
Serve alone or on sweet Hawaiian bread
