MOLTEN FLOURLESS CHOCOLATE CAKE
4 eggs
1/2 pound (8 oz) semisweet chocolate
2 ounces (1/2 stick) unsalted butter
cooking spray
crack eggs into bowl set over simmering water
whisk constantly one minute
remove from heat and continue to whisk until very fluffy
mean while, place chocolate and butter in bowl over simmering water until melted
let cool 5 minutes
fold chocolate mixture into eggs until no streaks
spray 6 4 oz ramekins with cooking spray
fill 3/4 full
bake 425 about 10 minutes
(you want to set edges but keep center gooey)
turn out onto plate
serve with powdered sugar or whipped cream
can be frozen and cooked directly from freezer
