Day 176



TOFU SCRAMBLE
Rinse and drain a package of firm Tofu
Mash in a bowl until it resembles cottage cheese
Heat 1 tablespoon of Oil in pan
Add 1/4 teaspoon each
Cumin
Coriander
Fennel seeds
Cook one minute till fragrant
Add a small amount of chopped red Onion
And chopped green or red Pepper
Add Tofu and cook 2-3 minutes
Fold in one or two coarsely chopped Tomatoes
Some fresh chopped Parsley or Cilantro
Season with Salt and Pepper
Excellent with garlic toast
and tomato juice with a squeeze of fresh lemon
