LEMON CHICKEN WITH SATAY DIP
Place up to 2 pounds Chicken pieces
in a glass roasting dish, skin removed
Pour over 3/4 cup Lemon Juice
1/2 cup Oil
Sprinkle generously with
Salt and Pepper
And 1 tablespoon fresh Thyme
You may allow this to marinate for a few hours
or cook now 400
turning pieces every 15 minutes
until 160 on instant read thermometer
Cool slightly
For Satay Dip:
Cook
1 tablespoon Oil
1 tablespoon Sesame Oil
1/2 cup minced Red Onion (or to taste)
1-2 cloves Garlic, minced
1-2 teaspoons grated Ginger
Few shakes of Red Pepper flakes
Until onion is transparent
Add
2 tablespoons Red Wine Vinegar
1/4 cup Brown Sugar
2 tablespoons Soy Sauce
1/2 cup smooth Peanut Butter
1/4 cup Ketchup
Optional:
Splash of Sherry
Juice of one Lime
Cook 1 minute
Cool and bit and use as dip
Chicken can be boned and skewered.
