Day 145



This had to be delicious....it's named after our daughter!

CHICKEN SALAD VERONIQUE
2 whole Chicken breasts, bone-in skin-on
Olive oil
Salt and Pepper
1/2 cup Mayonnaise
1 - 2 tablespoons chopped fresh Tarragon
1 cup small diced Celery
1 cup green Grapes cut in 1/2

Roast your oiled, salt and peppered chicken breasts
35 - 40 minutes in a 350 oven until cooked
Cool
Remove meat from bones and discard skin
Cut into dice size
Place in bowl
with mayonnaise, tarragon, celery and grapes, salt and pepper
and toss
That's it!
