Day 153


Pesto may be used on pasta, mixed with steamed or grilled vegetables,
as a sandwich spread, on grilled fish, chicken, or meat,
 as a dip for crudites, and diluted with more oil for a salad dressing.

BASIL PESTO
Place into food processor:
One bunch (4 ounces) fresh Basil leaves
3-4 cloves Garlic
1.2 cup Pine nuts (pignoli) or Walnuts
1/2 cup freshly grated Parmesan cheese
Slowly pour in up to 1.2 cup olive Oil
Season with Salt and Pepper

You may freeze the pesto in ice cube trays
and drop a cube or two into soups or stews for added flavor
