This is a wonderful orange cake
made the Tuscan way by Gabriele Corcos of Extra Virgin.
We turned them into cupcakes to celebrate Veronica's 23rd birthday.
SCHIACCIATA ALLA FLORENTINA
Mix together in bowl until well blended:
1 1/2 cups Flour
1 cup Sugar
1 1/2 tablespoons Baking Powder
Zest and juice of one Orange
3 Eggs
1/2 cup warm Milk
4 tablespoons Oil
Butter 9 x 13 inch pan (or use muffin papers)
Bake 350 for 25 minutes (15 for muffins)
or till toothpick is clean.
Let cool.
Flip cake out and cover with powdered sugar.
