Day 123


This is the only salmon my meat loving husband will eat.

SUGAR CRUSTED SALMON
Make a dry rub:
2 tablespoons Sugar
1 teaspoon Cayenne
lots of freshly ground Pepper
1/2 tablespoon Cumin
1/2 tablespoon Paprika
big pinch of kosher Salt
1/4 teaspoon dry Mustard
big dash of Cinnamon
Blend together and generously coat one side of
4 skinless Salmon fillets (about 5 ounces each)
Heat Oil in large pan over medium high
Place fillets in spiced side down
Cook about 2 minutes
Flip and cook over medium until fish is just opaque.
Fantastic!
