Day 77

This was one of our favorite foods at Dodger games.
When Claire Robinson recommended it as a simple 5 ingredient "fix",
I took a chance and was fantastically rewarded!

CHURROS
1 cup Water
1 1/2 tablespoons Sugar
Plus more for dredging
Pinch Salt
1 cup self rising Flour
2 Eggs, plus 1 Yolk
Peanut Oil

Heat water in pan with sugar and salt till hot.
Add flour all at once and stir vigorously for 1 minute.
Remove from heat.
Transfer to stand mixer bowl.
Mix on low until steam no longer escapes from the dough.
With mixer on medium, add one egg at a time until shiny, scraping sides.
Then add yolk.
Transfer to a piping bag with star tip.
Heat oil in pan to 375 degrees.
Squeeze out dough in 4-5 inch strips and fry till golden on both sides.
Drain on paper towels.
Toss in sugar while still warm.
You'll be on your knees
thanking the Mexican gods for these warm,
crunchy melt in your mouth
yumminesses.

Can be dunked into melted chocolate.
Regular flour can be used,
but the self rising makes them lighter and fluffier
