This a very dense, super rich flour less chocolate cake.
CHOCOLATE CAKE
7 ounces dark chocolate, chopped
7 ounces soft butter
4 eggs, separated
1 cup sugar
whipped cream or ice cream
Heat oven to 375.
Line with parchment, grease and flour an 8 inch spring form pan
Melt chocolate (either over water simmering or in microwave).
Beat in butter a little at a time till smooth.
Beat the egg yolks with 1/2 cup sugar until thick and pale.
In separate bowl, beat whites to soft peaks. Add 1/2 cup sugar and beat till stiff.
Whisk the chocolate mixture into yolks.
Stir in a spoonful of the whites.
Pour all that mixture over the egg whites and gently fold together.
Pour into pan and bake 40 to 50 minutes.
Top will be craggy, center moist.
Run knife around edge. Let cool.
Serve with whipped or ice cream.
