Day 51


Something to do with the leftover coconut from the pi.....
COCONUT SHAKE AND BAKE WITH MINT SAUCE
Chicken bits (either a whole cut up - I used some thighs and legs)
Place in a large bowl
Add some oil
Garlic powder
Cayenne if you like a kick
Salt and pepper
Toss about with hands
Place almost a cup of coconut and panko in a bag
Shake up a few pieces of chicken at a time
Put onto parchment covered baking pan
375 degrees  about 45 minutes
Special sauce:
into blender put
leaves of one bunch of mint
teaspoon sugar
pinch of salt
1 cup coconut milk
the zest and juice of lime
